2 Cups small grapes or cherry tomatoes (washed)
1/2 Cup firm or extra firm tofu (shredded)
1 teaspoon olive oil
1/2 cup cilantro (washed and chopped)
1 teaspoon Basil (washed and chopped)
1 teaspoon Oregano (washed and chopped)
Salt and Pepper to taste.
In a bowl mix Olive Oil, Cilantro, Basil and Oregano.
Add Salt and Pepper and Mix Well.
Add Tomatoes, Tofu and mix gently to avoid crushing the tomatoes.
Serve Chilled for a light meal or a side dish.
