3 Cups baby potatoes (washed and cut into halves)
1 Tablespoon Olive Oil
1 Teaspoon Whole Cumin
Salt to taste
1/2 Cup Kale (Washed and Chopped)
1/2 Cup Cilantro (Washed and Chopped)
1/2 Cup Basil (Washed and Chopped)
Cast Iron Pan
Pre-heat oven to 375 degrees.
In a bowl, mix oil, salt and potatoes.
Put the mixture in a cast iron pan.
Bake the potatoes in the oven for 15-20 minutes.
Add Kale and Cumin and mix it.
Cook in the oven for additional 3 minutes.
Add in the Cilantro and Basil in the mix.
Turn off the oven but keep the mixture in the oven for additional 2 minutes.
Remove from the oven and mix and serve immediately.
