Ingredients (2-4 servings)
1 Cup Basmati Rice
3 Medium Size Tomatoes
1 Green Chilli (Cut into very small pieces)
1/2 Block Soft Tofu (Cut into small pieces) (About 3/4 Cup)
1.5 Cup Water
1/2 Cup Coriander Leaves (Wash and Finely Chopped)
1.5 Tablespoon Corn / Canola Oil (Avoid Peanut or Nut Oil)
1/2 Teaspoon Cumin Seeds (Jeera)
Salt to Taste
Cook Rice, Put 4 cup Water and let it boil and then put rice and salt to taste.
Put Heat on Medium (Take water out from Rice).
It should cook in 15 Minutes. (Keep little uncooked)
When done, take out extra water and keep aside.
Wash and Cut Tomatoes and season them with oil and Cumin Seeds.
Add Oil in Pan and Keep on Medium Heat. Add Cumin Seeds and Let it Fry.
Add Tomatoes and mix well. Add 1 cup water and salt.
Once Tomatoes becomes soft, add tofu and green chillies and let it all cook.
If you need more water, you can add left over water 1/2 cup.
Add Rice, Coriander leaves and mix well, cook for 3 minutes.
You can taste if you want more Salt or Green chilli. You can add garlic as well.
Garnish with Coriander leaves.
