Vegan Khandvi

Khandvi or Dahivadi

1 Cup Chickpea Flour (Besan)
3 Cups Water
1/2 Fresh Lemon Juice
2 Tablespoon Corn / Canola Oil
2 Teaspoon Mustard Oil
1 Cup Fresh Coriander Leaves (Wash and cut very small)
2 Green chillies (wash and cut long thin pieces)
Salt to taste


Mix water, flour, lemon juice altogether in a microwave safe bowl.
Make sure flour is mixed well and not have small balls.
Add Salt to Taste
Put in microwave for 5 minutes.
Take out, mix well and put for 5 minutes more.
Take out, mix well and put for 3 minutes more.
Take out and spread in Aluminium Foil with flat wooden spoon as fast as you can.
You need 3 or 4 feet long pieces so keep them ready. Let them cool.
Then make mark with knife 2 inches. You can also roll all together and cut 2 inches later.


Then lift from one end and roll, Keep all together in big bowl.
Then put some oil in a small pot on low heat, once hot add mustard seeds.
Mustard seeds will pop – then add green chillies and coriander and mix well.
Add all on your Khandvi roll.
