SPINACH SALAD WITH BANANAS AND BLUEBERRIES

INGREDIENTS:

1 cup of baby spinach, washed and cut into small pieces

1 banana

3/4 cup blueberries, washed

your choice of dressing (or just a little salt)

pumpkin seeds, for garnish (optional)

 

METHOD:

  1. Cut the banana into 1/4 inch slices. Put the spinach into a big bowl and mix in a little salt. Add the banana slices and blueberries and mix well. Top with any dressing or just some salt and pepper. Garnish with pumpkin seeds for some crunch (optional)
