NOTE THAT AN APPE PAN IS NEEDED TO MAKE THIS RECIPE. IF ONE IS NOT AVAILABLE, THEN THE FRITTERS CAN BE DEEP FRIED OR COOKED IN AN AIR FRYER,
INGREDIENTS:
FOR FRITTERS:
2 medium sizes potatoes
1 small or 1/2 large sweet potato
3/4 cup corn, fresh or frozen and parboiled
1/2 cup broccoli, washed and finely chopped
1 cup spinach, washed and finely chopped
(for the corn, broccoli and spinach, you can substitute a total of 2 1/4 cup of any other finely chopped vegetables)
1 1/2 inch piece of ginger, chopped
2 green chili peppers, washed and chopped (optional)
4 curry leaves
Pinch of turmeric powder
Pinch of Kashmiri red chili powder (optional)
1 1/2 tablespoon of fresh lemon juice
1 teaspoon cumin seeda
1/4 teaspoon ajwain seeda
1/4 cup cilantro leaves, washed and chopped
1 1/2 tablespoon oil
salt to taste
Additional oil needed for cooking in the Appe Pan or for frying.
INGREDIENTS FOR FLOUR COATING:
3/4 cup besan (chickpea) flour or corn flour
1 cup water
1/4 teaspoon black pepper powder
1 teaspoon lemon juice
1/4 teaspoon turmeric powder
1/8 teaspoon baking powder
salt to taste
METHOD FOR FRITTERS:
1: Boil all potatoes with a little salt. Once boiled, remove from water and let them cool, Peel the skin and mash them, with no lumps.
2: Heat oil in a saucepan. Once the oil is hot, add green chilies, cumin seeds, ajwain seeds and curry leaves and fry for five seconds.
3: Add corn, broccoli and spinach (or other vegetables) with pinch of turmeric and a pinch of red Kashmiri chili pepper powder. Mix well.
4: Add salt, lemon juice and mix well. Cook for 5 minutes.
5: Add all potatoes and mix well. Cook for 3 to 5 minutes and keep stirring. They are done when they stop sticking to the pan. Set aside to cool.
- Once cool roll the mixture into the size of golf balls like the picture below.
METHOD FOR FLOUR COATING:
1: Add all of the coating ingredients, except water, into a bowl and mix well. Add the water little by little and keep mixing. The batter should be a bit thinner than pancake batter, like the picture below.
METHOD FOR COOKING:
1: When using the Appe pan, put the pan on medium low heat and 2-3 drops of oil into each hole. Dip one ball at a time into the flour coating and then put it immeditately into the Appe pan. Cook one side for 3 or 4 minutes until golden brown and then turn it overm cooking or another 3-4 minutes. See the picture below.
2: You can also deep fry the fritter or use an Air Fryer.

Serve hot as a sandwich with Gluten Free Sliced Bread, Mint and Coriander Sauce or Sweet and Spicy Coriander Sauce.
