Broccoli and Carrot Soup

INGREDIENTS (4 servings)
3 Cups of fresh broccoli, washed and cut into small pieces
1 Cup of fresh carrots, washed and cut into small pieces
1 medium onion, diced.
1 Tablespoon Canola or corn oil
1/4 fresh Lemon🍋
1 red hot pepper 🌶, fresh or dried
1/2 teaspoon Ajwain
1/2 teaspoon Fenugreek
1 teaspoon cumin seeds
Salt to taste

For Garnish
1/2 teaspoon fresh crushed black pepper
1 teaspoon Olive oil
1/4 teaspoon fresh Garlic, crushed
1/4 teaspoon Oregano

METHOD
In a frying pan, heat the oil on medium-low heat
Add ajwain, fenugreek and red chili🌶, cook for one minute until slightly roasted
Add all onions and sauté until translucent
Add all Broccoli and Carrots and mix well
Add cumin and salt, mix well and cover the pan then lower the heat and cook for 7 – 10 minutes or until they get tender.
Turn off stove and let them cool.
Once cool, blend this mix with 2 cups of water (or more if you want a thinner soup)
Squeeze your lemon 🍋 into the soup
Serve hot with added Garnish on top

You can eat with rice 🍚, roti or naan
