DAIRY FREE RAITA WITH CUCUMBER AND CARROT

INGREDIENTS:

1  1/2  cucumbers, fresh and very tender

1 small, fresh carrot, very tender

1 fresh green pepper, washed and cut into small pieces

salt to taste

1  1/2 cup non dairy yogurt

1/2 teaspoon roasted, crushed cumin seeds

1 tablespoon coriander leaves, washed and cut into small pieces

 

METHOD:

  1. Wash and shred the cucumbers and carrot. Put into a glass bowl and then add the green pepper pieces and some salt. Mix well.

  1. Mix the yogurt with a hand mixer. Add in the cucumber mixture. Put in the crushed cumin and coriander leaves and mix well. Adjust the amount of salt to your taste and then serve.
