We have lot lentils in market let’s intersduse one by one. So let make black eye peas curry it is delicious and easy .
1 cup black eye peas
1 cup fresh baby spinach wash and finely chopped ( if you don’t want use that’s ok to)
1 1/2 tablespoon oil corn or canola ( or your choice)
5 curry leaves
2 green chili wash and cut ( optional or you can use only 1)
2 clove of garlic ( optional I don’t use)
1 one inch of ginger wash and shreds
1/8 teaspoon fenugreek seed
1/4 teaspoon ajwain seed
1 teaspoon cumin seed
1/2 teaspoon turmeric
1/2 red chili powder ( optional)
1 teaspoon red Kashmiri chili powder ( just for color)
2 tablespoon coriander leaves wash and chopped
1 1/2 tablespoon fresh lemon juice
1:Wash black eye peas and soak them 3 or 4 hours,then strain all water out and wash with clean water, and cook in pressure cooker with 3 cup water and salt to taste. Let 4 whistle on high flame, add enough water in pressure cooker before you put lentils pot in . ( if you have instant pot you can cook in if you know how)
2: Let cool 10 minutes, then open pressure cooker, and wash the lentils with clean water.And tempered them with oil.
HOW TO TEMPERED
1: Put pan on stove medium low heat ,add oil in let it get hot add fenugreek seed,ajwain seed,curry leaves,ginger ( if you are using garlic then garlic) green chili,let all cook few seconds keep and stir so won’t get burnt,then add pinch turmeric and red chili powder and add your lentils in mix all well.add one cup water in salt to taste,cumin seed, turmeric powder, red Kashmiri chili powder lemon juice, and spinach, some coriander leaves ( keep some for garnish) mix all well .

3: Now let cook 5 to 7 minutes or your consistency,if you need more water then add 1/2 cup water in,taste for salt and lemon juice to your taste.
Serve hot with gluten free bread,Naan,rice quinoa or gluten free flatbread. before serve garnish with coriander leaves.
