WATERMELON SPREAD FOR TOAST

This spread is made out of the part of the watermelon that is firmer and closer to the rind.

INGREDIENTS

2 cups of watermelon
1 tablespoon of corn or canola oil
1/4 teaspoon of mustard seeds
1 teaspoon of cumin seeds
1/4 teaspoon of turmeric powder
1 tablespoon of fresh lemon juice
1/4 cup of jaggery
2 tablespoon coriander or cilantro (leaves washed and chopped)
Salt to taste

METHOD

You can see in the picture how I took watermelon pieces.

1: Put pan on the stove at medium heat, add oil and then add mustard seeds and cumin seeds. Let them  crackle.

2: Add watermelon and turmeric powder, mix well.

3: Add lemon juice, jaggery, and salt. Then add coriander leaves and reduce heat to low while covering the pan halfway. Cook for about 20 minutes.

4: Keep stirring so it doesn’t stick to the pan. Once it is no longer sticking to the pan and the oil separates, it is ready. between make sure don’t stick on pan.
