Radish (Mooli) and Spinach (Paalak) Paratha

INGREDIENTS
1 Cup Spinach, wash thoroughly and chop
1 Cup Shredded Radish (Mooli or Daikon Radish), washed
1 Green Chili Pepper🌶, finely diced and washed
1/4 teaspoon Cumin
1 1/2 Tablespoons oil (corn or canola oil)
1 Cup Rice 🍚 flour
1/2 Cup Chickpea or Besan flour
1/2 Cup Quinoa flour
1/2 Cup Buckwheat flour
1/2 Cup Millet flour
1/4 teaspoon Turmeric
Salt to taste
1 Cup warm water

1/4 Cup oil you need to cook the Paratha

METHOD
Mix all flours together in large bowl
Add radish, spinach, cumin , turmeric, salt, oil and mix well
Add warm water 💦 , 2 tablespoons at a time and knead the dough until smooth and into a ball. It should not be sticky.
Put some oil around the ball, cover bowl and let rest for 30 minutes
Take dough and make golf ball size balls, then press to flatten into disc
Put some flour on the disc and roll into a flat 1/8 inch thick circle.

Add 1/2 teaspoon oil to the tava or nonstick pan and turn heat to medium low.
Add paratha.
Let it cook on one side until you see slightly golden brown spots and it changes color. Flip over, add oil and let cook until golden brown.

You can eat with any yogurt, soup or plain.
