GLUTEN FREE FLAT BREAD WITH RADISH

INGREDIENTS

3/4 cup ragi flour

3/4 cup corn flour

1/2 cup chickpea flour ( all so call besan flour)

1/2 cup rice flour to roll them

1 cup wash and shredded radish ( white or red )

1/2 cup coriander/ cilantro leaves

2 tablespoon fresh lemon juice

2 tablespoon oil corn or canola / or your choice

Extra  oil for cooking

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

salt to taste

METHOD

1: In bowl, combine the besan flour, ragi flour, corn flour, cumin seeds, turmeric powder, oil ,lemon juice, coriander leaves and salt.  Mix very well.

2: In another bowl, put all shredded radish in and add  all flour mixture on top.  Let it sit for one hour.  ( to allow the flour to absorb moisture from radish).  Do not mix yet.

3:Now mix everything together to make dough – which should be firm (see picture).  You can add water if dough is too tight but add it one tablespoon at at a time.  Let it rest for 20 minutes.

4:Now using a teaspoon, scoop out a ball of dough and roll into a ball with your hands.  Press between your palms to make the flat and coat with dry rice flour.

5: Slowly roll with rolling  pin to make 1/4 thick circles.

6:Put pan on stove at medium low heat and let it get hot.  Put rolled flat bread on pan and let it cook for 20 seconds and then flip it over to cook the other side for 30 seconds.   Then spread 1/2 teaspoon of oil on the flat bread (while it is still in the pan) and flip it back over.  Let it cook to golden brown on both sides.

Our flatbread is ready to eat.

Note:This is very different and delicious, healthy flat  bread. This is vegan , allergy friendly, gluten free, dairy free, nut free. You can eat with soup, or any vegetables
