1 cup  broccoli washed and cut

1 potato

1 small sweet potato or yam 🍠

1 cup corn frozen or fresh

1 tablespoon oil corn or canola / or your choice

1 1/2 tablespoon fresh lemon juice

2  Tablespoon fresh coriander/ or cilantro leaves for garnish

1 inch pieces of fresh ginger

1 teaspoon cumin seed

1/2 teaspoon turmeric powder(optional)

salt to taste


1: Wash broccoli, potatoes and sweet potatoes, and then skin both types of potatoes. Cut them in two inch pieces, then put potatoes, broccoli into a large pot.

2: Add ginger, 3 cups of  water NS 1/2 teaspoon salt and put on stove medium high heat.  Cover pot half way and let them cook for  10-15 minutes, or until they get nice and soft.  You should be able to easily press a spoon through it. Turn stove off and let them cool

3: Meanwhile, in another pot, add oil and put on stove medium low heat for 3 minutes.   Add cumin seeds and let them fry until fragrant (5-10 seconds) then add tumeric power,  1/4 teaspoon salt and all the corn.  Stir so the corn does not stick to bottom of pot and let it cook for 2 or 3 minutes.

3:   Blend all the a boiled  vegetables into a puree.   Add 1/2 cup water and mix.   Now combine this puree with the corn and add lemon juice and salt to taste.  Let boil 3 to 4 minutes.

Here we go –  our soup to ready  to eat. Garnish with coriander leaves and serve hot .

This soup is very healthy and has a unique flavor. You can eat it with gluten free bread,  naan,  quinoa  or rice .

Note : You can add a green chili in last step if you like a little spice. This is delicious vegan, allergy friendly, gluten free, dairy free, nut free recipe.
