FETTUCCINE PASTA WITH MOONG BEANS AND ALL VEGGIES

INGREDIENTS

2 hands full of gluten-free fettuccine pasta

1 cup moong beans, wash, and soak few hours

1 cup of all colors sweet mini peppers, wash and cut in the long piece

1/2 cup of green beans, wash and cut in the piece

1 carrot wash and cut in a small piece

1/2 cup of wash and shredded cabbage

2  tablespoon  oil corn or canola/ or your choice

1 green chili wash and cut  in the  piece

1 teaspoon cumin seed

1/4 teaspoon turmeric

1 teaspoon red Kashmiri chili powder

2 tablespoon fresh lemon juice/ or to your taste

1teaspoon oregano

1 teaspoon basil

salt to taste

METHOD

LET’S CO OK MOONG BEANS

1: Put moong beans in stainer, let drain all water and wash them with clean water, put the pressure cooker on the stove medium-low heat, add 1 tablespoon oil inlet get little hot, then add green chili, cumin seed, let cook few seconds then add turmeric, red chili powder, mix well then add moong bean and 2 cups of water,1 tablespoon lemon juice, salt to taste, mix all good, and cover the cooker lid, put the whistle on, and higher the heat on high, let go of whistle 3 time and turn the stove off, let cooker get cool and pressure rilles itself, it will take about 10 minutes, open the cooker and check your moong bean, mix them well and taste for salt and lemon juice to your taste, it shouldn’t be watery.

2: put the pan on the stove on medium-low heat, add the rest of the oil in and add all your veggies in, add lemon juice, and salt to taste, and let cook for 3 or 4 minutes until they get a little soft but crunchy.

3: cook pasta according to box instructions. ( when you cook pasta please add some salt and lemon juice and little oil in the water so they won’t stick and give a good taste)

4: Now pasta is ready, drain all water out from pasta, and mix with moong beans and all veggie, add oregano,  basil and mix all well and let all cook for 1 more minute turn the stove off.

Here our pasta is ready to serve, serve hot if you like you can serve with gluten-free garlic bread.

Note: This is a very healthy one-pot meal with all your protein veggie, and carb, you can eat any time of day and kids love in there lunch box.
