DEEP PAN LENTIL FLOUR BREAD WITH SOME VEGGIES

INGREDIENTS

2 cup lentil flour ( i buy from the Indian grocery store )

1 cup of  shredded  zucchini

a hand full of organic baby spinach, wash and chopped finely

1/2 cup shredded carrot  or broccoli

1 tablespoon of lemon juice/ or to taste

1/4 cup oil corn or canola/or your choice

1 teaspoon  baking  powder

1/4 teaspoon Eno (it is fruit salt)

2 green chili pepper(optional) or you can use 1green chili wash and chopped

1/2 teaspoon turmeric

1 teaspoon cumin seed ( just give you a nice aroma)

salt to taste

METHOD

1: Take 3 cups warm water and soak lentil flour for half an hour,( make sure no lump in flour) then mix well with a spoon and add all veggie, lemon juice, turmeric, and salt to taste, and if you using green chili.

2: Put non stick pan or what aver pan you use,( you can use parchment paper if you want in a pan) on the stove medium heat,and brush pan with oil and let get hot.

3:Take small pan and put on stove, medium heat add oil in let get hot then add green chili and cumin seed.Let them cook for 20 scounds turn stove off, add baking powder in batter and eno in batter then mix all well,then add hot oil mix all well, Then add batter in the heated  pan.

4:Cover the pan,keep heat on medium low, put timer for 15 minutes, and let cook for 15 minut one side, then turen over for other side.If are using non stick pan then it will slide nicely in big dish, but you are cooking in other pan with parchment paper then you can take out with paper, and keep in the dish then turn over in the pan.

5:Then let cook other side for 15 minutes, it will be so nice and crunchy out side, and soft and spunchy  and delicious in side.

6: Let get cool for seven to ten minutes, before you cutting, and serve hot or cold just like other bread even you can toast too, you can make the sandwich, or you can eat just like that, you can keep in refrigerator for week in a airtight container.

Note: this is very healthy,full of protein and  veggie, children love in lunch box, and it is diffrent then any other bread,even you can eat without toast it will taste delicious.

Note: If you like to make flour home then you can do it.

INGREDIENTS : FOR FLOUR

1 cup split chickpea (call chana dal)

Or 1 cup tuver dal (split pagan peas)

1/2 cup long green rice

METHOD

1: Mix lentil and rice, and grind them in grinder, then you can keep in container and use when you need.
