All Colors Stuffed Sweet Peppers

INGREDIENTS:

1 pound of mixed sweet peppers (available at Costco)
1/2  cup chickpea flour (besan flour)
2 tablespoons cumin/coriander powder
1 teaspoon whole cumin
1 1/2 teaspoon red chili 🌶 powder ( you can adjust to your taste)
1/2 teaspoon turmeric powder
salt to taste
1/2 fresh lemon 🍋 juice
2 tablespoons oil, corn 🌽 or canola
A pinch of turmeric powder and red chili 🌶 powder
1 tablespoon cilantro for garnish, washed and chopped

METHOD:

  1. Wash the peppers and cut a slit through the middle lengthwise but do not cut through the peppers. It should remain one piece. Remove the seeds and keep aside.

  2. Mix the chickpea flour, cumin, cumin/coriander, chili and turmeric powders and salt in a small bowl.

  3. Stuff each pepper with the mixture as in the picture below.

  1. Heat oil in a deep pan on medium low heat. Once hot, add the pinch red chili and turmeric. Add pepper salt and mix well. Cover and let cook for 5 minutes, stirring a few times in between so they don’t stick.

  1. Garnish with cilantro, and lemon juice, serve warm as a side dish or main course with rice or Gluten-Free Roti / Chappati / Flatbread .
