MULTI-GRAIN WAFFLES WITH WHOLESOME VEGETABLES

INGREDIENTS

You will need waffle maker for this recipe.

1/2 cup splits chickpeas ( also called chana dal)

1/2 cup splits  pIgeon peas (also called toor dal)

1/2 splits moong ( also calledmoong dal)

1/2 any kind of uncooked rice

1/2 cup  baby spinach washed and finely chopped

1/2 cup zucchini washed and shredded  or  you can use  any vegetable of your choice

some oil to brush the waffle maker

1 teaspoon baking powder

2 tablespoons fresh lemon juice

1 teaspoon cumin ( optional)

1/2 teaspoon turmeric powder ( optional)

1/2  cup non-dairy plan  yogurt

salt to taste

If you feel it is safe for your diet to buy a store bought flour mixture, you can buy Ondhawa flour instead of using the various dals and lentils. You can  find it in most Indian grocery stores.  You can follow the same METHOD  and  other INGREDIENTS to make them.

METHOD

1: Grind all lentils in coffee grinder or blender.   Wash all the peas/lentils 2-3 times with clean water and drain thoroughly. Then grind all lentils in coffee grinder or blender.

2: In a bowl, mix the ground lentils,  yogurt, baking powder, lemon juice, cumin seeds, tumeric and salt together.   Mix very well then add 1.5 cups of water.    Mix until there are no lumps.  Cover the bowl and set aside for about 1 hour.

3:   In an hour, check your batter.  You made need to add small amounts of water if the batter is too thick.  It should be the consistency of pancake batter.

4: Plug in waffle maker and turn on.   Brush the waffle grill with oil.     Add the spinach and zucchini to the batter and mix well.   Pour batter into the waffle maker.   In my waffle maker it took 8 minutes to cook to a beautiful, crisp, healthy waffle!

Here our delicious and tasty,  healthy  waffle are ready .

Now you can eat this delicious waffle  in may different ways.

You can eat these with fruit!

Yummy with avocado!

Or make a pizza with vegan cheese !

Note: This amazing healthy waffle can be eat in many different ways.   It is a good way to get kids to eat vegetables.   They  are  vegan, allergy friendly,  gluten free, dairy free, and nut free.
