Easy Cauliflower

INGREDIENTS (4 servings)

1 medium sized head of cauliflower, washed and cut into big pieces

1/2 cup  olive oil

1/2 tablespoon crushed cumin

1 teaspoon oregano 🌿

1 teaspoon  basil 🌿

2 green chilis 🌶, washed and finely chopped

2  garlic cloves, crushed

5 curry leaves (optional)

1/2 cup coriander leaves, washed and finely chopped

salt to taste

METHOD:

1. Boil water (enough to cover the cauliflower. Add salt and let it boil.  Once it is boiling, add cauliflower and let it cook for 2 minutes. After two minutes, remove from heat and strain the cauliflower. Let it cool for ten minutes.

2. Add all of the remaining ingredients into a large bowl and mix well. Add cauliflower and mix well. Let it marinate for 20 minutes and then serve. It look like this when ready.

 

Delicious with gluten free hummus or guacamole. You can also just eat is like this as a snack!
