Apple 🍎 And Soy Paneer Brownie

INGREDIENTS
2 Gala Apples 🍎, washed and cut into small pieces
1 Cup Sugar
1 Cup Brown Sugar (or jaggery, shredded)
1/4 Cup Quinoa flour
1/4 Cup Gluten free backing flour
1/4 Cup Sweet Potato 🍠 (not Yams), washed, baked and mashed
1/2 CupΒ Soy Paneer
1 1/4 Cup Cocoa Powder, gluten free
3 Tablespoon πŸ₯„ Ground Flaxseed, soaked in 1 Cup of warm water or warm soy milk
1/4 teaspoon Salt

METHOD
Pre-heat oven to 350 F
Beat flaxseed mixture until it becomes fluffy
Add both sugars slowly and continue to beat on low speed until mixed
Add remaining ingredients and beat well
Line an 8 inch baking pan with parchment paper
Pour mixture into the pan

Bake for 45-55 minutes.

Remove from oven, cool completely and serve with soy vanilla ice cream🍦
